Apple Cinnamon Cake

Apples come in  many varieties and each is its own version of delicious.  Since they are in season, our fruit bowl has been filled with all different kinds as of late.  Shown above are Gala apples, one of my favorites.  They are fabulous in this Apple Cinnamon Cake.  Here is the recipe.  Enjoy!

Apple Cinnamon Cake

2/3 cup softened butter
2 eggs
1 cup sugar
1/2 cup brown sugar
2 cups all purpose flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp baking powder
1 tsp baking soda
1 cup milk
1 tbsp. apple juice
2 chopped apples

Topping:
1/2 cup nuts (almonds or walnuts)
1/2 cup brown sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Cream the butter, sugar, and brown sugar, then add eggs.  Mix in the flour, cinnamon, salt, baking powder, baking soda, milk and apple juice.  Add the chopped apples.  Pour into a buttered 13 x 9" pan.  Sprinkle topping over batter.  Bake on 350 for 30-35 minutes.
