Easy Weeknight Meal

I am always on the lookout for meals that are simple, quick and relatively healthy to make after busy days.  This is a salad I concocted one night that is easy to assemble with simple ingredients that are usually staples in my refrigerator.  Since my husband loves it we've been eating it quite often lately.   Enjoy!

Ginger Chicken Salad for Two

6 Chicken Tenders
1 clove of garlic
1-2 Tbsp vegetable oil
sprinkle of ground ginger
1 Tbsp. soy sauce
drizzle of honey
Red Leaf Lettuce

2 or 3 Scallions
1 can Mandarin Oranges
1 Carrot
Almonds

Boil chicken tenders until cooked through.  Cut meat into bite sized pieces.  Saute the cooked meat in oil, add minced garlic and sprinkle lightly with ground ginger.  Mix in the soy sauce and then a little honey for sweetness.  Meanwhile, assemble the salad using the remaining ingredients.  Top with the chicken then add sliced almonds.  Drizzle a bit more honey on for dressing and serve.
