Easy Appetizer: Little Quiches

This is a delicious and simple appetizer to make at the last minute when having friends over.  It is done in half an hour and can be made with many different fillings. 


Won ton wrappers
Swiss/ gruyere cheese, grated
Cooked honey ham, thinly sliced into small pieces
Scallions, minced
3 eggs
1/2 cup whipped cream
1/2 cup milk
salt and pepper to taste

Preheat oven to 400 degrees.  Lightly coat the cups of a mini-muffin tin with butter or cooking spray.  Then press one won ton wrapper into each cup.  Add grated cheese, ham and minced scallions to each cup.  Using a whisk, mix eggs, cream and milk in a small bowl.  Pour the mixture into each muffin cup.  Bake for 15 minutes, covering with foil if the won ton wrappers start to brown before the quiches are fully baked.

Makes 20 mini quiches.
